Today I decided to cook  Turkey Macaroni Casserole, a dish I found on Carries Cooking. Should be interesting.

As is always the case when recreating new meals, I encountered problems right off the bat.

First of all, when I went to make this dish I discovered that I did not in fact have macaroni in my pantry, so as usual I was forced to make a quick, last minute substitution and make the Turkey Macaroni Casserole with Penne pasta instead.

I set the water to boil and then was dragged away as one of my children had triggered some pretty intense virus alarms on their computer and I had to call my husband to confirm their validity. I failed to reach him.

After a few minutes of guarding the computer trying every method of reaching my husband, I finally gave up and went downstairs to put the noodles in. No sooner did the noodles hit the water than the doorbell rang, preventing me from even setting the timer for them.

I had spent a few minutes talking with a pest control guy and trying to keep my two youngest children from interjecting, when the phone rang. It was my husband, so I sent the pest guy on his way and went back to the phone. At this point I figured the noodles were hopefully done, so I took them out and rinsed them with cold water, leaving them in the strainer to deal with the computer.

When I finished all  I could do with the computer, I took the butter and melted it slowly over med-low heat and added the 2 cups of cheddar cheese (and I had the right cheese this time), milk and cans of cream of chicken soup. Then I added my chopped up turkey, mixed it with the noodles and put it in the casserole dish.

I have no idea what this is going to taste like, because with all the distractions, by the time I got this far it was time to go to 31 cent scoop night. According to the recipe, this freezes well, so it’s now covered with foil and in my fridge while I decide if I’m going to serve it this week. I’ll be sure to check in and let you all know if it makes my 4 out of 5 family members requirement for a dinner I’ll keep.
